Laban Making
Roll up Your Sleeves and Learn the Tricks of Authentic Yogurt Making
Come and explore a unique and traditional recipe for Kishk Laban pies with a farmer from Bookagri in her home garden. Kishk Laban is made from local wheat that has been boiled and dried, then mixed with thick goat's yogurt. The mixture is then rolled into balls and left to dry in the sun, which is a way of preserving goat's milk and wheat when they are out of season. Before use, Kishk Laban is soaked in water and mixed with diced onion to become the stuffing of a whole wheat grain dough. The pies are then baked in a traditional oven using firewood. You can put on your Bookagri apron and get involved in making your own Kishk Laban pies. Once they are ready, take them out of the oven and enjoy them with the Ajlouni traditional food and a cup of delicious tea.
